When the raw nut-in-shell is received from farmers, it must go through a thorough sample testing process. This includes inspecting the appearance, smell and size of nuts within the sample batch, to check for mould, insect damage and other deformities. Only the nuts which adhere to our strict acceptance criteria are passed on to production.
The drying process has 2 stages - "pre-drying" and "final drying". This aims to reduce the moisture content to the level required for processing. Drying takes between 2-2.5 weeks, depending on the initial moisture levels of the received nut-in-shell.
Dried nut-in-shell passes through production in order to achieve the final product. This involves cracking, sorting, grading into the different macadamia styles. A final inspection takes place before the processed kernel is transferred to the packing area.
Processed kernel is inspected for contamination (salmonella, aflatoxin etc.) and metals, before being nitrogen flushed vacuum packed and stored in 25lbs cartons as per the export standard. Each style is packed separately and stored, ready to be shipped out when requested.
